Chocolate Chip Banana Oat Pancakes
I keep saying this, but it's true: you got to start the new year off right! And there's no better way to begin than with finding time to fit in breakfast on the daily. One of my recent favorite concoctions is chocolate chip banana oat pancakes. It's even made with whole wheat flour! They're so delicious and the secret is blending the oats with the banana so that it won't be too grainy or thick of a pancake. Top it off with some fresh fruit and a drizzle of maple syrup... mmmphh! What a way to start off a new day.
Chocolate Chip Banana Oat Pancakes (serves 2, 1/2 dozen 4" pancakes)
1/2 cup whole wheat flour
1/2 cup rolled oats
1 medium banana, ripe
1/4 cup dark chocolate chips
1/3 cup low fat milk
1 egg
1 tsp baking soda
1-2 tbs olive oil
1. Blend the banana, rolled oats, milk, and egg.
2. In a separate bowl, mix the whole wheat flour and baking soda. Fold in the banana mixture and chocolate chips.
3. Heat olive oil on medium on a pan. Pour large spoonfuls of batter.
4. Cook to desired level of browness. Serve with maple syrup on the side.
